Sometimes things don’t really go to plan. This is how it was with my sponge cake on the weekend away down South of Sydney a few months ago. I really wanted to make a sponge cake for a very long time. Inspired by Poh’s Lemon Sponge cake Encouraged by my friend, I decided to give it a go. The first obstacle was not having the right ingredients. I only had an ordinary flour and I needed to mix it with potato flour. I went to every store in the area where I was without any success. The second challenge was to find the right cake tray -thanks God there was one in the nearby store. But there was more challenges. I had to use the oven which I have never used before. This meant not know ting the right temperature and the time of baking which can be really hard. Finally the cake was done! No, it was not the best. Was edible but not so nice. After trying a slice or two I knew that it will not be enjoyable treat for anyone. Finally thought about something Australian and simple. So, I cut it into triangles, dipped in melted chocolate and coated with shredded coconut. And the lamingtons were delicious!
My baking experience reminded me about many life experiences. Most of the time, things don’t go according to plan. They are often not what I expect or hope them to be, but instead of saying what they CANNOT be, I like to explore about what they CAN become. Never give up!
